Baobab fruit pulp snacks

The baobab tree grows all across Africa where it’s so useful that it’s nicknamed the ‘tree of life’. The baobab’s leaves, fruit, and seeds are all edible.

The baobab fruit we use for our fruit leather strips is rich in nutrients including calcium, vitamins B1, B6 and C. It’s also rich in dietary fibre. That’s why we use this fruit as a basis for our hand-made fruit leather snacks.

About

Growing up in Kenya, I loved eating fresh baobab fruit as a delicious snack. I live in the UK now but I was determined my children would also get the chance to enjoy this delicious treat – especially now I know how nutritious it is.

But I was disappointed to find that only powdered baobab fruit was available in the UK. I tracked down a source of baobab fruit from East Africa and began to experiment in my kitchen. My aim was to make a healthy lunchbox snack that my kids would love as much as me.

The result is a new way to enjoy baobab fruit as a scrumptious raw fruit strip designed for the lunchbox (but enjoyed by mums and dads too).

And my kids? They love them!

We add blueberries, bananas, and a little coconut to the pure pulp of baobab fruit. Then we slowly dry it out to make a healthy snack rich in vitamin C and E.
